How Long Does Raw Steak Last in the Fridge?

In practice, how long it stays fresh depends a lot on how you store it, especially how you package it. Proper storage protects the steak from contaminants and slows spoilage, helping it stay fresh longer.

Most grocery stores wrap steaks in plastic and butcher paper. That packaging works for short-term storage, but it does not keep the steak as fresh as possible. Throughout the day, those steaks often sit exposed to air, which speeds spoilage. As a result, the steak can develop an off smell, lose flavor, and become more vulnerable to bacterial growth.

A much better option is vacuum-sealed steak. Vacuum sealing removes most of the air around the meat, helping slow spoilage and keeping the steak fresher longer. If you’re choosing between a steak wrapped at the counter and one vacuum-sealed, the vacuum-sealed one will usually last longer in the fridge.

My take on this is simple:

For the best quality, I prefer to freeze store-wrapped steak if I’m not cooking it within 2 days, even though USDA guidance generally allows fresh beef steaks to stay refrigerated for 3 to 5 days at 40°F (4°C) or below.

For thawing, my go-to method is leaving the steak in the fridge overnight the day before I plan to cook it. It takes longer, but it gives the best results. If I need to cook the steak the same day, I thaw it in cold water a few hours earlier, ideally in the morning, so there’s still enough time to season it later.

The best way to check if raw steak has gone bad is to use your senses. Start by looking at it. If the steak has strange discoloration or a slimy surface, that is a bad sign. Then smell it. If it smells sour, funky, or just off, do not eat it.

While smell and texture are useful warning signs, they are not 100% reliable indicators of whether raw steak is still safe to eat. If you’re unsure, also consider how long the steak has been in the fridge, whether it stayed at 40°F (4°C) or below, and how you thawed it. When in doubt, follow USDA storage guidelines rather than relying on smell alone.

My rule is simple: if the steak looks weird or smells bad, I throw it out. It’s not worth the risk.

How to Keep Raw Steak Fresh for Longer in the Fridge

Here’s what you need to do:

  • Leave the unopened steak in the original packaging. If you haven’t opened the steak, don’t touch it. Just keep it in the original packaging and put it in the fridge.
  • Wrap the opened steak tightly. If you’ve already opened the package, wrap the steak tightly in plastic wrap. This helps limit air exposure and keeps the steak from picking up smells from other foods in the fridge.
  • Vacuum seal it if you can. For the best storage, vacuum-seal the steak. Vacuum sealing keeps air away from the meat, helping it stay fresh longer in the fridge.
  • Keep your fridge cold enough. Make sure your fridge stays at 40°F (4°C) or below. If the temperature runs warmer than that, the steak will spoil faster.

If you know you won’t cook the steak within 3 to 5 days after buying it, freeze it. That’s the best way to keep it fresh for longer.
